Whole 30 Reintroduction – Day 4

Monday

Breakfast:
Honeycrisp apple
Smoked salmon and avocado on sweet potato toast
Coffee with nut pods

Lunch:
Today I’m reintroducing gluten-free grains. I had a big bowl of oatmeal for lunch and now I have a tummy ache. I have a few theories about that. Yesterday and today have been hugely stressful. And that amount of stress always results in an stomach-ache. Also, I over did it on the oatmeal. I ate what I think was actually two servings. That’s a lot of fiber in one go! So we’ll see how my stomach feels the next couple of days.

Trader Joe’s gluten-free Oatmeal made in coconut milks with almonds, cinnamon, blueberries.

Recipe:

1 can coconut milk (14oz)
1 cup oats
toppings

Bring coconut milk to a gentle boil in a small saucepan over medium-low heat. Stir in oats and lower heat and simmer until milk has mostly been absorbed, about 15 minutes.

Sprinkle almonds, blueberries and cinnamon into oatmeal. Cook until oats are creamy and flavors are combined, about 2 minutes.

Dinner:
Scrambled eggs
